Spring Salad, Holland Park

For the last few days in London have felt more high August than April, we’ve had cloudless skies and temperatures over 20°C. The whole city seems to be celebrating (in beer gardens) after work! My flatmate and I decided to make the most of thia surprise heatwave by eating alfresco. As we live in a flat and are resoundingly garden-less we made a salad-to-go to take to the park.

This salad is packed with protein, pescetarian and so filling. With the following you can make enough for 3 people as a main, 4 as a side salad :

1/2 bag of baby spinach

1 tin of chickpeas (400g)

1/2 tin of red lentil (200g)

half a punnet of cherry tomatoes, halved

1tin of Tuna

4 inches of cucumber, cubed

feta, cubed

olive oil, salt and pepper

2tbsp lemon juice

Drain your tinned ingredients and mix in your serving bowl, add a generous glug of olive oil, Lemon juice and seasoning. Stir through your fresh ingredients so everything is spread evenly. This salad is packed with protein which helps you feel fuller for long. It is packed with amino acids which makes this an ideal post workout meal as amino acids are essential for the growth and repair of muscle. It’s fresh and clean food perfect for a accompaniment to a BBQ or a meal on its own.

We weren’t particularly healthy as we had our salad with a side of Heineken (my housemate is Dutch after all)  as we watched the sun go down in the Kyoto garden. I hope everyone is enjoying the sun as much as we are!!

  1. Looks SO tasty! Have to admit I’m not a tuna fan so I’d probably switch it with smoked salmon or mackerel but oh yum! Loving the sunny weather, it’s so beautiful!
